I came across your blog with your recipe for the Egg Slu-style potato and coddled recipe. I have recently started using my sous vide appliance and am trying to figure out how to make a simple not-too-hard hard boiled egg. I followed instructions for a recipe online for hard boiled eggs that simply immerse the whole egg in the shell in water at a specific temperature for a precise amount of time. The result was inedible rubbery ‘egg balls’, once peeled. I’ve successfully made egg bites (egg, milk, cheese mixture) using 4 ounce mason jars submerged in the sous vide water bath. I’m now wondering if I can just crack an egg into a jar and in essence, make a ‘shell-less’ hard boiled egg to eat by itself or removed from jar and chopped into a salad. Any thoughts?
I don’t typically sous vide eggs, mostly because I don’t eat a lot of hard boiled eggs buuut Kenji Lopez-Alt is known for his really extensive testing and I would trust his step by step processes: https://www.seriouseats.com/2013/10/sous-vide-101-all-about-eggs.html Hope that helps!
